How the Swedish dip gets made

Estrella dip mix is made by stirring one sachet into sour cream and letting it stand before serving. The maker’s instruction is one sentence:

Mix with sour cream and dip finely cut vegetables, your favourite crisps, or serve with food and salad.

Estrella publishes no ratio and no standing time, so there is nothing to measure and nothing to get wrong. Stir the sachet through and give the seasoning time to take up moisture before the bowl goes on the table.

The sachets are small, and they are built on dried onion, salt, starch and yeast extract with the seasoning layered over the top.

Gräddfil is the Swedish soured cream these were written for, and it is a thinner, tangier thing than Australian sour cream. Use the sour cream on your supermarket shelf and you will get a thicker, richer bowl than a Swede would, which is no bad outcome next to a bowl of crisps.

In Sweden the bowl goes out on a Friday night. It travels further than that:

  • Crisps and cut vegetables, the way it is served in Sweden

  • A jacket potato, with the dip spooned over

  • Potato salad or slaw, folded through

  • The barbecue table, next to whatever came off it

Which dip mix to start with

Onion is the plainest of the three and the one to put next to plain salted crisps. Estrella calls it a full onion flavour and a creamy dip for a party or an everyday occasion.

Sourcream & Onion is the richest. Buttermilk powder comes third on its ingredient list, so there is real dairy in the sachet before you add any.

Holiday is the all-rounder, the one to reach for when the bowl has to please a whole table. Chilli pepper is declared among its spices, though Estrella calls the flavour mild.

Estrella began in 1946 with Folke Andersson importing bananas from South America, which is where the name comes from, since estrella is Spanish for star. He first tasted potato crisps at a boxing match in New York in 1957 and decided to make them in Sweden. Estrella still runs from Angered just outside central Gothenburg and has been part of the Intersnack Group since 2014.

Stir one Estrella sachet into sour cream and let it stand before serving. Estrella’s own instruction is to mix it with sour cream, then dip finely cut vegetables or your favourite crisps, or serve it alongside food and salad.

Holiday dip mix is not hot. Estrella describes the flavour as mild paprika and onion, and although chilli pepper is declared among its spices, the blend is a mild one.
